Wine making

Fruit was picked at 9 Baume and fermented in stainless steel vats to produce base wine. 45 day charmat method for secondary fermentation, and the wine remaining on lees for a further 90 days to build further complexity.
Food pairings

Parma ham, prosciutto and light cured meats or lightly fried fish will be fab with a light and refreshing Prosecco.
